For the filling of our ravioli, we use Castelpoto sausage, which we freshly prepare in our kitchen. We blend pork shoulder and belly with a spice blend of paprika from Southern Italy, fennel seeds and black pepper. We then add provolone, a soft smoked cheese, to finish this tasty ravioli filling and dress them with sage butter.
